Chocolate Cake from scratch!

Well yesterday I posted that it was hubby's Birthday and we grilled yummy steaks and chicken for him. It turned out great! Then I steamed fresh asparagus, squash and zucchini.

Then like a dummy coming up our side porch to bring in the dishes that I had them marinating in I fell and now I got a nice bruise right above my foot. Sometimes I can be just a klutz.

Well here is the recipe for Chocolate Cake I promised. Let me tell ya I have tried so many different chocolate cake recipes in my life and this one is the best. I use this cake recipe to make homeade hostess cupcakes.

Ingredients:

2 cups sugar
1 3/4 cups all purpose flour
3/4 cup unsweetend cocoa powder
1 1/2 teaspoon baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Directions:

1. Preheat oven to 350 degrees F(175 degrees C). Grease and flour two nine inch round pans.

2. In large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda, and salt.
Then add the eggs, milk, oil and vanilla. Mix for 2 minutes on medium speed of mixer.
Stir in the boiling water last. Batter will be thin. (To me I would call it soupy.)
Pour evenly into the prepared pans.

3. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.

Then ice with your favorite icing recipe. I made Chocolate Buttercream Icing. My hubby likes his chocolate cake with peaches. Which you probably thinking that doesn't sound good but you should try it. I usually pour some peach juice on top of his slice with his peaches. It is yummy!
Enjoy!

  1. That all sounds and looks delish! I like to fix zucinni and asparagus on the grill, but I think it sounds like he had a great b-day dinner.
