A rough day and a great dinner recipe!

Today has sure been a rough one! I don't understand why Monday's have to be so rough and why the kids have to drag school out forever it seems like. Of course it seems worse this week then most as I got so much to do this week. The whole house needs to be spottless by Thursday and all the laundry needs to be washed and folded. I have to have the girls packed as soon as school is done Thursday we are all going to my mom's. The girls will be staying the night with them till Sunday and the boys will be going to work with their daddy Friday. I am off to Ladies Retreat! Which I so need and am very much looking forward to! I haven't been able to go the last 2 years as I have been nursing. This will be the first time that Hannah has spent the night off.

I know even though right now I don't see the light at the end of the tunnel it will be Friday and I will be headed off to the wild blue yonder. As you can see I have been busy this weekend writing up reviews and giveaways just for ya'll! I fill like I am back on my game! It's nice to have victory!

Now with that being saidI want to share this great recipe that my husband introduced me to. This is his recipe from the take of Applebee's Fiesta Key lime chicken a few years back. I love it! He says it's better than Applebee's every was. I have to say I believe him.

I being a mom of 6 love finding different recipes and sharing the great ones that work at my house. If you by chance have a great recipe please share it!

Key Lime Chicken

8 boneless skinless chicken breast (this is what I do for my family do however many you need)
2 tomatoes diced
1 large onion diced
Zesty Italian dressing
Ranch dressing
Sliced Mozzarella Cheese
 2 Limes cut into sixths
Tortilla Chips

First I prep all my stuff. I dice my tomatoes and onions and put them in a bowl. Add just enough Zesty Italian Dressing to mix with you don't want it covering it. Then I cut my lime into sixths. We use two as we have a big family and I love the lime juice. I put all that aside and then head out to the grill and grill the chicken till done. Then I bring in the chicken in a large skillet I place my chicken breast and cover with Ranch Dressing. I cook this rotating the chicken breast till the Ranch Dressing is the consistency of butter. Then you add the sliced mozzarella cheese on top and let it melt. Then on a plate I crunch up the Tortilla Chips add the chicken breast on top. I then pour some of the sauce on top from the chicken breast. Then you add the tomato and onion mixture. After that you squeeze the lime juice on top and eat! You can have whatever sides you want or no sides at all. I promise this alone is filling. I usually do one side.

You can also make this recipe a little more diet-friendly by omitting the cheese, or using a weight loss system like Sensa!
